I feel like you either really love ranch or it’s not your jam

This recipe is for those who are ranch lovers. The base of this dressing can be made with nuts or seeds. I like to use cashews, sunflower seeds, tahini or sometimes pepitas. When you soak nuts and seeds it allows them to have a softer/creamier texture for the dressing. Not to mention added health benefits, like better digestibility and absorption.

There is always a bean or nut soaking on my counter tops – getting prepped for the next days use. After a while; it becomes a flow that takes little extra time and is enjoyable!

Anytime someone is sensitive to a bean, nut, seed or legume; I ask them if they’ve indulged in them soaked or sprouted. This process helps ease the issues people usually have with these foods and opens up a world of food choices.

Here at the house we have bulk spices that I sprinkle into this dressing, that give it a very ‘ranch flavor’. Dried parsley, chives, dill, onion, mustard and garlic do their thing and bring this dressing to life.

Ingredients

  • 2 cups soaked cashews (about 3 oz dried)
  • 6 tbsp plant yogurt, unsweetened
  • 2 tbsp apple cider vinegar *
  • 2 tbsp lemon juice
  • 2 tbsp plant milk, unsweetened
  • ½ cup + 4 tbsp water
  • 2 tsp dried parsley leaf
  • 2 ½ tsp dried chives
  • 2 tsp dried dill
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp mustard seed, ground mustard powder or mustard
  • ½ tsp pepper

Instructions

  • Combine ingredients into a high powered blender and blend until creamy smooth, about 2-3 minutes
  • Alternatively; with an immersion blender – I like to place all ingredients into a pot and blend until creamy smooth, about 2-3 minutes
  • Alternatively; a food processor works well too. Process for 2-3 minutes

Notes

To soak cashews overnight; place them into a bowl and cover with water by an inch or two – cover and let sit overnight. Rinse and drain them in the morning and use! Be careful not to over soak – about 8 hours is great.
Apple cider vinegar and lemon juice can be used interchangeably here.
