The humble cream of buckwheat.

Asks for so little and gives so much. This ancient grain is not really a cereal grain at all. Instead, it’s a fruit seed that comes from the buckwheat plant. This plant creates beautiful small white flowers that attracts bees and is a great cover crop – to protect the soil from UV damage (for all of you future farmers).

I swapped out the oats for this, about a year ago. I have no issues digesting buckwheat and it’s a great alternative for those who are gluten free. In fact, I feel incredible after a bowl of this in the morning. Some foods just work in mysterious ways. I appreciate how nutrient dense this seed is – not to mention it’s quick cook time.

Cream of Buckwheat

Cream of Buckwheat w/ Blueberry Compote

Ingredients

  • 2 cups plant milk + splash for later
  • ½ cup water
  • ½ cup cream of buckwheat
  • 2 tbsp macaforce
  • 2 tbsp hemp seeds
  • ½ tsp cinnamon powder

Garnish

  • Fresh berries
  • Berry Compote
  • Mint Leaf
  • Hemp Seeds

Instructions

  • In a small pot, heat plant milk and water on low flame
  • As soon as the plant milk and water start to simmer, add the cream of buckwheat and stir
  • Keep stirring, a steady stir – to encourage consistency *
  • After about 8-10 minutes, your cream of buckwheat should be ready
  • Remove from heat and add to your breakfast bowl
  • Stir in the MacaForce, hemp seeds and cinnamon powder
  • Add a splash of milk to thin it up
  • Garnish with berry compote, fresh berries, hemp seeds and a mint leaf

Notes

You can alternatively make this entire dish with no plant milk – just substitute plant milk for water. However, the plant milk brings it to life!
I used this brand, for my cream of buckwheat.
I love making this in the mornings, because it requires you to be present. You should stay with the pot to stir slowly for the 8-10 minutes, consistently. During this time, I like to set my intentions for the day – or simply just breathe.
