I created this juice to bring together the flavors of prickly pear fruit, lime, agave and cinnamon.

The majestic Prickly Pear Cactus is a gift to this Earth.

If you’ve never seen a prickly pear cactus, i’ll paint the picture for you. Imagine a flat, paddle-like cactus full of thorns – crowned with fruit bulbs, that vary in color- topped with a budding flower. A masterpiece. I grew up seeing these everywhere, especially in Mexico.

The magical fruit that decorates the cactus is the inspiration for this juice. Most prickly pear fruits i’ve had in my life are bright in color and mild in flavor. They are in a word, humble. After you remove their thorns, you can enjoy these straight out of the skin. I created this juice to bring together the flavors of prickly pear fruit, lime, agave and cinnamon.

Prickly Pear Juice

Ingredients

  • 4 prickly pear
  • 2 tbsp lime juice
  • 2 tbsp agave syrup
  • 2 tsp cinnamon powder
  • 2 cups water

Instructions

  • Remove the skin from your prickly pears*
  • Blend the inner fruit in a blender, on high – until liquid
  • Separate the pulp from the juice with a fine mesh strainer *
  • Pour the pulp-free prickly pear juice back into the blender and add all remaining ingredients
  • Blend on high for 5-6 seconds
  • Serve chilled over ice, or room temp

Notes

if your prickly pear has thorns, remove before working with them. Most prickly pears at your local store come with the thorns removed. However, if you’re using fresh picked prickly pear- please ensure you remove the thorns by holding your fruit in metal tongs and singing the hairs/thorns over an open flame. They will turn to ash, making your peeling easy!
To remove the skin from the prickly pear, slice  the ends off.  Then make a shallow slice from end-end of the pear. This slice should be about ⅛ th deep into the the fruit. Then run your finger under the skin and peel around, should be a breeze!
Press a spoon into the pulp on the fine mesh strainer – to remove all excess juice from the pear
