Garlic Alfredo Sauce
Whole, roasted, blended into sauces and made into artisanal plant cheese – cashews are at the center of my diet.
Ingredients
- 2 cups soaked cashews *
- 4-5 garlic cloves
- 3 tbsp nutritional yeast
- 1 tbsp salt
- 1 tbsp pepper
- 1 lemon, juiced
- 1.5 cups water
- 1.5 tbsp onion powder
Instructions
- Blend all ingredients together, until creamy smooth
- Serve warm
Notes
Soaking raw cashews helps remove a bit of the phytic acid, which in turn – increases the nutrition and digestibility of cashews. Not to mention, it makes for a very creamy cashew. There are a few methods to soaking cashews. Here I used the overnight soak method.
How to soak cashews overnight:
In a large bowl add your cashews and filtered water (1:3 ratio cashew to water). Cover the bowl and place in fridge for 8 hours, overnight. Drain them, store until you use that day in an airtight container – or start using right away!
When heating this sauce in your pan, you may need to add a splash of water, since the heating process releases some moisture
