Chickpea “Tuna” Sandwich
Bite into this creamy/crunchy sandwich full of fresh vegetables and packed with MUCH flavor!
If I could travel back in time; I would take this yummy sandwich to school and wouldn’t switch it at lunch with anyone who asked.
Or, maybe I would – because a PB&J is always a nice switch up. This plant version of a classic sandwich is nothing short of nostalgic, to me. It reminds me of climbing trees, no shoes, sitting on the ground with friends and eating with no napkins and finishing everyone’s bread crust. Bite into this creamy/crunchy sandwich full of fresh vegetables and packed with MUCH flavor!
Chickpea ‘Tuna’ Sandwich
Bite into this creamy/crunchy sandwich full of fresh vegetables and packed with MUCH flavor!
Ingredients
- 1 canned chickpeas, rinsed, drained 30oz
- 2.5 celery stalks, chopped
- 1 Large purple onion, chopped
- ½ cup Veganaise
- 2 tbsp Lemon juice
- 1 tomato (sliced)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tbsp capers (minced)
- 1 tbsp hemp seeds
- Sprouts (handful)
- Sliced bread I use double fermented sourdough
Instructions
- Simmer chickpeas in lightly salted water, to tenderize them – for about 5 minutes
- Remove chickpeas from water, drain and rinse
- In a large bowl, mash chickpeas
- Add celery and onion to chickpeas and stir
- Add remaining ingredients and mix thoroughly
- Toast bread
- Layer tomato, sprouts and chickpea mixture onto bread
- Enjoy!
Notes
An alternative to capers is chopped pickles/relish.
Can be eaten as a dip with crackers
