Love Salad

This salad is vibrant. Very vibrant. Loaded with fresh leaves and fruits - you’re eating the rainbow.

Ingredients

  • ¼ head green cabbage, sliced thin
  • 1 head kale, broken up into smaller pieces
  • Handful of spring lettuce mix
  • 3 carrot, sliced thin
  • 5 radish, sliced
  • 4 persian cucumber, thick sliced
  • 1 red bell pepper, sliced
  • 1 ripe mango, sliced
  • 1 - 1 ½ cup cooked edamame
  • Miso lime dressing

Instructions

  • Add all prepped produce to a bowl, mix well
  • Toss in the miso lime dressing and serve!

Notes

I like to add grilled tofu skewers on top of this salad - for a heartier dish.
