This salad is vibrant. Very vibrant. Loaded with fresh leaves and fruits - you’re eating the rainbow.

Ingredients
¼ head green cabbage, sliced thin
1 head kale, broken up into smaller pieces
Handful of spring lettuce mix
3 carrot, sliced thin
5 radish, sliced
4 persian cucumber, thick sliced
1 red bell pepper, sliced
1 ripe mango, sliced
1 - 1 ½ cup cooked edamame
Miso lime dressing
Instructions
Add all prepped produce to a bowl, mix well
Toss in the miso lime dressing and serve!
Notes
I like to add grilled tofu skewers on top of this salad - for a heartier dish.
