Spiced Fruit Cider

When winter comes, I crave a virgin-version of warm holiday spirits.

Ingredients

  • 4 apples, each cut into 4 pieces *
  • 1 orange, cut in half
  • 1 pear, cut into half
  • 2 inch finger of ginger *
  • 8 cloves
  • 1 tsp anise seeds *
  • 1 tbsp apple cider vinegar
  • 2 tbsp agave syrup
  • 4 cups water

Instructions

  • Add all ingredients into the bowl of a pressure cooker
  • Pressure cook on high for 15 minutes, allowing the steam to release naturally (not forced to open early)
  • When the pressure cooker is ready to open, use a strainer or strainer ladle to separate the juice from the fruit and spices
  • Squeeze the fruits + ginger individually to get the extra juices, using your hands (this is where all the extra good juice is at, don’t skip this step!) *
  • Serve this cider warm and enjoy

Notes

I used a combination of different pink/red apples for this recipe - get creative! I’d stay within the pink/red family 
Peel and slice your ginger into half, to amp up it’s flavor in the cider.
If you can’t find anise seeds, no worries- substitute 1 star anise, instead.
After you have released the extra juices from the fruit, you can mash the pulp of the apple and pear together to make a quick apple-pear sauce (great on pancakes).
