Chickpea ‘Tuna’ Sandwich

Bite into this creamy/crunchy sandwich full of fresh vegetables and packed with MUCH flavor!
- 1 canned chickpeas, rinsed, drained 30oz
- 2.5 celery stalks, chopped
- 1 Large purple onion, chopped
- ½ cup Veganaise
- 2 tbsp Lemon juice
- 1 tomato (sliced)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tbsp capers (minced)
- 1 tbsp hemp seeds
- Sprouts (handful)
- Sliced bread I use double fermented sourdough
Simmer chickpeas in lightly salted water, to tenderize them - for about 5 minutes
Remove chickpeas from water, drain and rinse
In a large bowl, mash chickpeas
Add celery and onion to chickpeas and stir
Add remaining ingredients and mix thoroughly
Toast bread
Layer tomato, sprouts and chickpea mixture onto bread
Enjoy!
An alternative to capers is chopped pickles/relish.
Can be eaten as a dip with crackers
