Chickpea ‘Tuna’ Sandwich

Bite into this creamy/crunchy sandwich full of fresh vegetables and packed with MUCH flavor!
Course Snack

Ingredients

  • 1 canned chickpeas,  rinsed, drained  30oz
  • 2.5 celery stalks, chopped
  • 1 Large purple onion, chopped
  • ½ cup Veganaise
  • 2 tbsp Lemon juice
  • 1 tomato (sliced)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp capers (minced)
  • 1 tbsp hemp seeds
  • Sprouts (handful)
  • Sliced bread I use double fermented sourdough

Instructions

  • Simmer chickpeas in lightly salted water, to tenderize them - for about 5 minutes
  • Remove chickpeas from water, drain and rinse
  • In a large bowl, mash chickpeas
  • Add celery and onion to chickpeas and stir
  • Add remaining ingredients and mix thoroughly
  • Toast bread
  • Layer tomato, sprouts and chickpea mixture onto bread
  • Enjoy!

Notes

An alternative to capers is chopped pickles/relish.
Can be eaten as a dip with crackers
